I'm out of the hospital and not feeling so good. My body is in pain and on top of that I have a cold. The worse part is that I can't take any meds for the cold! I also can't shower today and clean the stench of hospital off of me. The doctor doesn't want me to get wet til tomorrow. I'm like a grimlin I can't get wet!

So I'm mostly sleeping and sipping on orange juice. Hopefully tomorrow I feel a bit better.

PB&J bars



Peanut Butter and Jelly Bars
adapted from Baked Explorations
makes 15 large bars or 32 more manageable squares


For the sweet pastry dough:
1/4 cup sugar
1 1/2 cups plain flour
1/4 tsp salt
1/2 cup cold unsalted butter, diced
1 large egg

For the peanut butter filling:
1 cup unsalted butter
2 cups smooth peanut butter
1 3/4 cups icing sugar
1/2 tsp vanilla extract

For the crumb topping:
3/4 cups plain flour
1/4 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/3 cup firmly packed dark brown sugar
2/3 cup rolled oats
6 tbsp cold unsalted butter, diced

For assembly:
2 heaping cups good quality jelly or preserves

For the sweet pastry dough: Combine the sugar, flour and salt in a food processor and pulse to combine. Add the butter and pulse until sandy. Add the egg, yolk and white whisked together beforehand, and add to the flour mixture. Pulse until the dough begins to come together. Form the dough into a disk, wrap it tightly in plastic wrap and refrigerate for at least 1 hour or overnight.

Line a 9 x 13 inch pan.

Roll out the dough and fit into the bottom of the prepared pan. Place the pan in the freezer for 30 minutes.

Preheat oven to 375F. Remove the pan from the freezer, place a large sheet of aluminum foil on top of the dough and fill it 3/4 full with pie weights. Bake for 15 minutes, remove the foil and weights, and bake for another 10 minutes, or until the crust is lightly browned. Transfer pan to a wire rack to cool.

Reduce the oven temperature to 325F.

To make the peanut butter filling: Beat the butter until completely smooth. Add the peanut butter and beat until combined. Add the icing sugar and vanilla and beat until smooth. Turn the mixture out onto the crust and spread it out into an even layer. Chill the peanut butter layer while you make the crumb topping. (Or you could make it the night before.)

To make the crumb topping: Whisk together the flour, baking powder, salt, baking soda, cinnamon, brown sugar and oats. Cut in the butter until loose crumbs form.

To assemble the bars: Spread the jelly evenly on top of the peanut butter filling. Sprinkle on the crumb topping.

Bake for 20 to 25 minutes or until the top is browned. Transfer to a wire rack to cool completely before cutting. It would be easier to cut after refrigeration.

Can be stored in the refrigerator in an airtight container for up to 2 days.

today is the day

I should be sleeping but I can't get to sleep. In just a few hours I'll be heading to the hospital for my test. Well it's more then a test. it's pretty invasive. There is drugs and needles involved. I've had this done four times before but it never gets any easer. the worst part is I might have to stay in the hospital over night. And that'll suck.

Well I guess I'll head off of here and try to get some sleep. Wish me luck.

packing

There's a make up store next to me finally! I was so happy when I walked into the store. I can't remember the name of the place, like ultra or something like that. They sell the brands that I use and that I use to have to go all the way across the lake to get. Now I can just go right around the corner. So yeah that made me happy.

Also got a hair cut today. I have a pic of it but I look horrible in it so I wont be posting it. It's pretty short and all choppy. I love the choppy look. I was thinking about dying it purple, but after A-Kon I plan on getting a job so that wouldn't work.

Tomorrow is my test at the hospital. I have to pack a little over night bag just in case I have to stay at the hospital. I really hope that I don't. Tho to be honest, I get my best sleep when I'm in the hospital. Don't know why, maybe it's all the sweet drugs. So yea, I have to find a duffle bag or something and pack some cloths. My teddy bear. Cuz I have to have my teddy bear. Gotta pack my meds. What else? A book. That might be it.

Well my pain meds are kicking in and telling me that it's time to sleep, so off to bed I go.

What you’ll need:
  • 2 cloud-shape felt
  • beads for the chain (I used 45 x 6mm crystal beads)
  • 10 drop-shape beads (I used 8mm chalcedony drops)
  • 45 eyepins
  • 13 jumprings (I used 12 x 8mm and 1 x 6mm)
  • 1 clasp
  • beading wire
  • 4 small pieces of chains (mines are 3 x 0.8cm and 1 x1.6cm, but they depend on how big your beads are)
  • a pair of flat-nose pliers
  • a pair of round-nose pliers
  • a pair of wire cutters



made two clouds by needle felting, but you can use whatever material you want for the clouds such as felt, leather or polymer clay, as long as it has enough ‘body’ to withstand the weight of the beads.



1) Let’s start by making the chains. Thread a bead to an eyepin, and bend it at a 90 degrees angle.
2) Leaving about 1cm, snip off the excess eyepin with the wire cutter.



3) Grasp the end of the eyepin with the round-nose pliers, then twist it in a circular motion until the end of the headpin forms a small loop.
4) Repeat the step 1 to 3 to make the second loop, then simply add the first loop to the second loop before closing it.



5) Continue the steps to make two chains until you reach the length you want. I used 22 beads on the left side, and 23 on the right side.

6) Add the clasp and one end of the chain to the jumpring.
7) And add a jumpring on the other end of the chain, and you’re done with the chains.
8) Poke a hole through the edge of the cloud with an awl or large-eyed needle.
9) Place a jumpring through the hole.







10) Continue step 8 &9 and place 11 jumprings in total. The jumprings 1 and 11 are where the chains will be connected later.

11) Thread a bead to the beading wire (about 10cm in length).
12) Twist the wire once above the bead.


13) Trim one of the wires.
14) And create a loop above the twist using round-nose pliers
5) Wind the wire around 3-4 times below the loop.
16) Add the bead to the jumpring. One raindrop done!





17) To make ‘dangling’ drops, add the chain to the loop before wrapping the wire.
18) Add the ‘chain + drop’ and ‘without chain drop’ to the jumpring, and you’ll have the ‘dangling’ drops.



19) Repeat the steps to add all the drops to the jumprings.

20) Connect the shorter chain to the jumpring on the smaller cloud.
21) Connect the longer chain to the jumpring on the bigger cloud, and you’re finally done!

Made homemade potato ships today, with sweet potatoes. They are very salty. I think next time I'm going to lay off the seasoning. They're not bad, just need to be tweeked a little bit. shake all ingredients in a martini shaker with ice. pour in shooter glass and top with whipped cream and sprinkles.

buffalo chicken egg rolls







2 boneless chicken breast
1/3 cup hot sauce
2 tablespoon cream cheese
2 tablespoons shredded cheese
1 cup slaw mix
1 package egg roll wraps
none stick cooking spray
water



Orange Creamsicle cookies



Ingredients:

2 1/2 cups of all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter sofften
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1 teaspoon vanilla
zest of 2 oranges
1 3/4 cups of white chocolate chips



Directions

preheat oven to 375
In a small bowl stir together flour, bakingsoda and salt
In a large bowl beat sugars and butter together until creamy
Beat in egg and vanilla
slowly beat in flour mixture
mix in zest and chocolate chip
roll dough into balls
bake for 8 minuets or until golden around the edges

Had sushi today. Lots of sushi. maybe too much sushi. But it was yummy! My diet actually has been going well been controling my eating and honestly I will have less and less diet updates. I don't want my blog to be all about my struggle to lose weight. Tomorrow. Or tonight I don't know yet, I'll have some make up tips and tricks on here.

I did much better today, had this lovely salad. Then slept most of the day. I also cleaned. I cleaned a lot. the cat just sat on a box and watched me. So after I cleaned the cat and I went to bed. Of course just because I did good today, doesn't mean I'll do good tonight. Like most nights I'll probably pig out on everything in the kitchen. And this is why I'm fat.

diet wohs

Why is this dieting thing so hard. I mean the concept is easy. Eat less move more. Not hard stuff. It's the doing it that I find almost impossible. actually the eating less I got down. I cheated a little today, but you can't do everything all at once, baby steps. But for the most part I have my eating under control. it's the moving that I find hard to do. Every part of my body hurts and moving just makes it worse.

Tomorrow is a new day I will try harder to work out and stay away from the chips. Mmmmm chips....

I think I'm going to head to bed, not feeling well. Oh my test is next Friday. They think I might have to stay in the hospital over night :( I hope not but we'll see.
